Raw Cacao-Coconut Bites {grain-free, sugar-free}
Time for a super easy, sweet treat.

These feel decadent, thanks to the cacao powder and chewy dates. And the chocolate & coconut combo... I mean, can you go wrong?
This week, I served the bites on a small cutting board at the table for a healthy, sweet treat to end the meal. I just give these a whirl in a food processor before I start making dinner, then pop them in the freezer for a few minutes to harden. As soon as dinner is ready - trust me - these bites will be ready.
Plus, now you have healthy treat for tomorrow, too.
Raw Cacao-Coconut Bites {grain-free}
(Makes about 12-14 bites)
- 1/2 cup raw walnuts
- 1/2 cup raw pecans
- 8 large Medjool dates, pitted
- 1 Tablespoon coconut oil
- 1 Tablespoon raw cacao powder (unsweetened cocoa powder will work)
- 1/8 teaspoon sea salt
- 1/2 cup unsweetened shredded coconut
Directions:
- In a food processor, blend the dates with the nuts until crumbly, but not yet a paste. If the dates are hard, soften them for 10 minutes in hot water, then drain, take out the pit and chop.
- Add the rest of the ingredients to the nut mixture in the food processor. Process until crumbly. It should hold together when you pinch it.
- Roll dough into tablespoon-sized balls and freeze for a few minutes to quickly harden. You can also store in the refrigerator until ready to serve.
- Keep stored in an air-tight container in the refrigerator.
These are a healthy snack that taste devine. :)
