The cookie with a brownie attitude

I remember growing up with birthday parties or reunions that had cookie bars on the dessert table. You know, the thick squares of chocolate chip cookies.  They were so much thicker than a cookie.  It was like a brownie… but better.  They are thick, fluffy and filled with chocolate chips! 

Cut them into small squares and you will feed a whole party with one batch  :)

CHOCOLATE CHIP COOKIE BARS

(Adapted from Martha Stewart recipe)

  • 1 ½ cups (3 sticks) unsalted butter
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • ¾ teaspoons salt
  • 1 cup sugar
  • 1 ½ cups light brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 bag semi-sweet chocolate chips (I use half mini chocolate chips and half regular sized chips)

-Butter a 12 x 17 inch baking sheet.  Preheat oven 350 degrees.

-In medium bowl whisk flour, baking soda and salt. Set aside

-cream butter and sugars until light and fluffy (2 minutes)

-Add eggs and vanilla until combined. Add flour until just combined.  Add chocolate chips.  Spread on baking dish and bake 40-50 minutes or until golden brown.  Cool completely. Cut into squares with a serrated knife.
