One-Bowl M&M Blondies
Looking for an easy dessert that’s festive, kid-approved, and takes minimal effort to whip up? These one-bowl M&M blondies are it!
If you’ve never made blondies before, think of them as the buttery, vanilla-rich baby of a cookie and a brownie—chewy, gooey, and packed with flavor. It’s in a bar like a brownie and has a similar flavor to an m&m cookie! Like a super chewy cookie bar.
The ingredients are also very minimal, which I always love!
Butter
Egg
Vanilla
Dark Brown Sugar
Flour
Salt
M&M candies
And what I love most about these? You mix everything in one bowl, pour the batter into a pan, and you’re done. See my reel here with the steps. Recently, these lasted less than a day in our house—and we wrapped up a few to deliver to neighbors (my kids love dropping off surprise treats!). After the bars were literally gone in hours, they were asking for more.
Whether you’re prepping for an Easter brunch, need a dessert or weekend treat, or just want something fun to bake with your kids, this recipe is a must-try. Don't be surprised if you find yourself making a second batch the same day.
If you make these, don’t forget to tag me at @urban.apron so I can see your baking adventures! I love connecting! Enjoy!
M&M Blondies
½ cup unsalted butter, melted and cooled slightly (1 stick)
1 egg
1 tablespoon pure vanilla extract
1 cup dark brown sugar
1 cup all-purpose flour
½ teaspoon salt
1 cup M&M's (plus more for topping)
Instructions:
Preheat your oven to 350°F and line an 8x8 baking dish with parchment paper (or lightly grease). TIP: I prefer putting parchment paper at the bottom of the pan for easy removal after baking - here is my favorite paper to use, it’s also great for cookies!!
In a large mixing bowl, whisk together the melted butter, brown sugar, egg, and vanilla until smooth.
Add flour and salt and stir with a wooden spoon until just combined—don’t overmix!
Fold in 1 cup of M&M's.
Pour batter into prepared pan and smooth the top. Press more M&M's on top for a festive look.
Bake for 20–25 minutes, or until the edges are golden and a toothpick comes out mostly clean (a few moist crumbs are okay).
Let cool in the pan for at least 30 minutes before removing and cutting into squares.
