Easy Homemade Granola

If you're anything like me, you're always on the lookout for simple homemade snacks that don’t take up too much time but still give you that satisfying "I made this" feeling. Enter: homemade granola. It's the perfect recipe for a busy mom juggling kids, work, and everything in between, but who still wants to bring a little homemade goodness to the table.
For too long granola was always something I wanted to start making again, but just didn’t. Finally, I decided it was time to change that! I wanted a recipe that was SUPER easy. There are not any mix-ins in this recipe because my daughter has a tree nut allergy, so I also wanted something our entire family could enjoy!
This granola recipe is so straightforward, and you likely already have most of the ingredients in your pantry. It’s my go-to when I want something quick that tastes amazing. Plus, it's one of those recipes where the kids can jump in and help—because let’s face it, sometimes involving them makes everything more fun (and keeps them occupied for a bit!).
Our favorite way to enjoy this granola is simply on its own as a snack, or we top vanilla Greek yogurt with a generous scoop. My daughter helped me make this batch, and the smell of cinnamon and maple syrup baking in the oven made the whole house smell heavenly. Trust me, it’s worth it for that alone!

NOTE: If you use gluten-free rolled oats, this is a gluten-free granola! And nut-free. And vegan!
Easy Homemade Granola
Ingredients:
3 heaping cups of rolled oats (opt for organic, if you can!)
1 tsp ground cinnamon
1/4 cup coconut oil (melted)
1/2 cup pure maple syrup
Instructions:
Preheat your oven to 300°F.
In a large bowl, mix the oats and cinnamon.
Melt the coconut oil, then combine it with the maple syrup.
Pour the wet ingredients over the oats and cinnamon, stirring until everything is well coated.
Spread the mixture evenly on a baking sheet.
Bake for 25 minutes, stirring halfway through to ensure even browning.
Let the granola cool completely (this is the hard part because it smells so good!), then break it up into chunks.
