Strawberry Banana Ice Cream
My family went to Eckert’s Farm in Belleville IL last weekend for their pick-your-own strawberries and it was SO fun. I just love picking fruit, there is something about the experience that makes me soooo happy. And I feel like it’s great for our kids to do - get into the earth and pick the fruit that they then eat.
We had a blast, and so naturally we picked a loooot of strawberries. Like, sooo many strawberries...
So here come some things we have been making with them!!!….
First up is this strawberry banana nice cream. It’s super simple because you just blend everything up and keep in the freezer! Thaw it out a few minutes before scooping to make it easier to scoop.
Strawberry Banana Ice Cream
2 large bananas, sliced
1 cup strawberries, sliced
3/4 cup milk (I used oat milk)
splash of vanilla extract
Instructions:
Slice and freeze the bananas and strawberries overnight.
In a blender, blend all of the ingredients until smooth. Transfer to a bread pan or glass container that you can freeze and freeze until firm. Take out of the freezer before enjoying and let thaw a few minutes. Then, once a little thawed, it makes it easier to scoop. Enjoy!
