Grain-Free Almond Butter Chocolate Chip Cookies

These cookies are a favorite over here! And if you use a dairy-free chocolate, you can easily make them vegan!

Grain-Free Almond Butter Chocolate Chip Cookies

  • 1 cup natural almond butter

  • 1/2 cup dark brown sugar

  • 1/2 cup white sugar

  • 1 flax “egg” (1 tablespoon ground flax mixed with 3 Tablespoons water)

  • 1 Tablespoon pure maple syrup

  • 1 teaspoon pure vanilla extract

  • 1/4 fine sea salt

  • 1 teaspoon baking soda

  • 1 cup chocolate chips

  • flaked sea salt for topping, if desired

Instructions:

  1. First make the flax egg and let set in a small bowl while you mix the other ingredients,

  2. In a large bowl, mix the almond butter with the sugars until combined. Add in the flax egg and combine. Add in the remaining ingredients except the chocolate.

  3. Fold in the chocolate chips.

  4. Scoop tablespoon-sized dough balls on a cookie sheet lined with parchment paper. Bake at 350 for about 10-12 minutes (until golden brown and appears baked through), and then remove from oven and let cool for 5 minutes on the sheet pan before removing to a wire rack. Store at room temperature for up to a week.

  5. Makes 18-20 cookies.
