Oatmeal M&M Bites
Anyone out there a cookie dough fan? I know I am. You will love these! These cookie dough bites taste like monster cookie dough. But a tad healthier, because they are sweetened with maple syrup instead of sugar! I feel like these are such a fun snack.
The pastel spring m&m’s just make me happy. The second they hit the store shelves each spring, we always have a bag on hand. But, if you don’t have M&M’s, you can also just use chocolate chips.
This recipe will make 12 cookie dough balls.
Enjoy!
Oatmeal M&M Bites
1 cup oat flour (blend oats in a blender or food processor until finely ground)
1/2 cup natural peanut butter
1 Tablespoon coconut oil (easiest to mix if it’s melted)
3 Tablespoons pure maple syrup (if you don’t have maple syrup, use honey)
1 teaspoon pure vanilla extract
pinch of sea salt
1/2 cup M&M’s
Directions:
In a bowl, mix all of the ingredients except the M&M’s until fully combined. It should feel like cookie dough.
Mix in the M&M’s.
Scoop 12 dough balls and roll in your hand to make them smooth balls.
Store in refrigerator and enjoy!
