Glazed Coconut Cookie Bites {grain-free, sugar free}

Happy Sunday! Today I have a fun twist on an energy bite. Our family has been cutting out refined sugar this month, and oh how good I’ve been feeling on simply whole foods! But, from time to time it’s good to have a pick-me-up treat. And the good thing is that it can still be a treat WITHOUT the sugar. The trick? Dates. That’s all you need to give these the right amount of sweetness.

This is an energy bite that is dunked in a coconut butter glaze. These are inspired by Nutrition Stripped’s glazed donut holes. My husband and I polished them off in an embarrassing short period of time… but one or two each day should hit the spot! ;)

Glazed Coconut Cookie Bites

  • 1 cup raw cashews

  • 1/2 cup unsweetened, shredded coconut

  • 10 large pitted Medjool dates

  • 1/8 tsp. vanilla extract

  • pinch of sea salt

Glaze:

  • 1/2 Tablespoon coconut oil

  • 2 Tablespoons coconut butter

  • splash of vanilla extract

Directions:

  1. In a food processor, process the cashews, coconut, dates, vanilla and salt until forms a dough. This will take a minute or two. You want to be able to pinch the dough with your fingers and have it stick together.

  2. Roll into balls and refrigerate until chilled. About 30 minutes to an hour.

  3. Make the glaze by melting the coconut butter and oil together and stirring until smooth. Add in the splash of vanilla and stir.

  4. Take out the chilled balls and roll into the coconut butter glaze. Let chill until firm. Store the bites in the fridge for the week .
