Family-Friendly Whole Wheat Strawberry Baked Donuts

Dylan’s little home daycare is having a Valentine’s Day pajama party on Thursday! Treats welcomed. What is a mom to make 1 1/2 year olds for a party?! 

The first thing I thought of was strawberry something. And baked donuts seemed a bit more fun than a muffin. But you could totally place these in mini muffin tins, that also works.

This recipe makes 6 baked donuts. It was perfect because there are 4-5 of the little ones at my daughter’s home so they don’t need a lot. But, I could also see you making these for your family for Valentine’s Day. Or make them this weekend!

If you make these with a non-dairy milk they are vegan.

Baked Strawberry Donuts

  • 1/4 cup milk of choice

  • 1/3 cup pure maple syrup

  • 1/2 tsp pure vanilla extract

  • 3 3/4 Tbsp. neutral tasting oil (I used a light tasting olive oil)

  • 1 cup whole-wheat white flour (or whole wheat pastry flour)

  • 2 pinches of ground cinnamon

  • pinch of sea salt

  • 1 tsp. baking powder

  • 1/3 cup diced fresh strawberry (plus 2 extra strawberries for the topping)

  • Glaze: 2 spoonfuls of powdered sugar + 1 spoonful of milk of choice + 2 diced strawberries

Instructions:

  1. Preheat over to 350 degrees.

  2. Whisk the first 4 ingredients together until combined. Add in the flour, cinnamon, salt, baking powder and stir with a wooden spoon until just combined.  Fold in the diced strawberries. 

  3. Spoon into a donut pan or mini muffin tins lined with muffin liners. Bake for 12 minutes. Let cool for 2 minutes in the pan and then invert on a cooking rack to cool completely.

  4. Make the glaze by stirring together the milk and powdered sugar until combined. Add more powdered sugar if it’s too runny. Stir in the diced strawberries and slightly mash with a spoon. Drizzle glaze over donuts. Store in refrigerator until ready to serve.
