truffles galore.

Soooo… it’s the holiday season!  

With holiday parties, cookie swaps, and christmas gifts…it’s a given there will be baking in my kitchen.   

          

These truffles are an exciting change to the peanut butter buckeyes that usually hang out on the holiday dessert table.  Don’t get me wrong, pb and chocolate are the perfect couple.  Although, these truffles will send you flying.

Even if you think you aren’t a coconut person (even I thought that was me)… Don’t knock it till you try it!!     

            

And these are so easy too.  My specialty…because I am impatient (which explains my crazy white chocolate drizzle on top, done wayyy too fast.)

Milk Chocolate Coconut Truffles

makes about 24 teaspoon-sized truffles

  • 3 cups sweetened, shredded coconut
  • ½ cup powdered sugar
  • ½ cup sweetened condensed milk
  • ¼ cup canola oil (flavorless oil) or use coconut oil, melted
  • 6-7 Hershey’s Chocolate bars, melted (or 1 ½-2 cups milk chocolate chips, melted)

Directions:

- In a large bowl, combined coconut and sugar and mix to combine.

- Add in milk and oil, mix constantly until a gooey coconut filling results. 

-  Roll between the palm of your hands into teaspoon-sized (or a little larger) balls and place on a parchment-lined baking sheet. Freeze for 10-15 minutes, then remove from freeze and roll again between your palms to smooth any coconut edges. Freeze for 10-15 minutes more.

- While freezing, melt chocolate chips in a double boiled or microwave. Remove coconut balls from freezer and immediately dip.

- Refrigerate until ready to serve – at least 15 minutes.

- I melted white chocolate and drizzled on top of the truffles after the chocolate hardened and immediately sprinkled with gold sprinkles.

      

TIPS:  Dip the truffles in the chocolate using a fork for easy, clean dipping and smooth-looking chocolate.  Don’t worry if it’s messy on the parchment paper. After the chocolate hardens and you remove the truffles from the parchment, they will look great, trust me!

A trick: drizzle with white chocolate to hide any mistakes or rough edges. I am sure your drizzle will look a lot better than mine.
