roasted almond butter
Blending almonds in a food processor today.
Because making nut butter is one of my favorite things.
But first.
We must roast the almonds.
Whenever I buy raw nuts, I make sure to roast them in the oven before storing them in large mason jars.
Just spread the nuts on a baking sheet and bake them in the oven at 350 degrees for about 10 minutes. Or, until you start to smell them. You can also toast them in a dry skillet for 5-10 minutes instead of putting them in the oven.
Roasting is a crucial step if you want your desserts, salads and snacks to stand out. Or your nut butters.
So…today I am sharing my recipe for roasted almond butter.
This recipe is a simple & healthy one.
But, you can doctor it up with honey or cinnamon if you’d like. Lately, I’ve been eating very clean, so I do not add sweeteners and I just use a bit of coconut oil. The oil helps the butter become smooth while also adding health benefits.
Spread this on bananas or apples. Kick up your pbj or toast. Or heck, just eat it plain like I do.
Because when it is basically 2 ingredients. Why not make your own?
Roasted Almond Butter
- 1 heaping cup unsalted roasted almonds
- 2 tsp. coconut oil
- pinch of kosher salt
Directions
- In a food processor, blend the almonds for 2 minutes or until it starts to form a paste. Scrap down the sides occasionally. Add in the coconut oil and salt and blend for about 3-5 minutes until it becomes smooth. Add more oil, if needed, until it reaches the desired consistency.
- You will be blending this for over 5 minutes, so do not worry if it takes longer than you think. It is worth it!
- Just when you begin to think it is smooth enough, keep going for 1 minute longer…that is the crucial time that it will become smooth and creamy like the store-bought nut butters.
- optional additions: ½ tsp cinnamon, 2 tsp. honey, 2 tsp maple syrup
- Put the almond butter into a ½ pint size jar and store at room temperature for a week. If it is not eaten within a week, put it in the refrigerator. It will keep for a few months, but it will likely not last that long. :)
- This recipe will fill about 1 half-pint mason jar.
There is just something about homemade nut butters. When you start to make your own, it’s like you’ve discovered a hidden secret that many people don’t know about.
Well, that secret is just pure whole food.
And it’s delicious.
