healthy chocolate chip banana bread {gluten-free}

Here is one of my favorite recipes for a healthy gluten-free banana bread.

Because we all need that excuse to load up a bread with chocolate chips.

What’s in this bread?…

  • oat flour
  • brown rice flour
  • nonfat Greek yogurt
  • coconut oil
  • bananas
  • dark chocolate chips.

These are all good ingredients that are very good for you. Which means this bread is definitely something to feel good about enjoying.

Plus, anything with coconut oil is a winner in my book.

Since I eat mostly gluten-free, I prefer to making this a gluten-free bread.

But, when home with my family, I make this recipe using two cups of whole-wheat flour in place of the oat and rice flours.

Using whole-wheat flour with create a heartier and darker bread. 

But equally delish, if you ask me!

Try this one out this weekend.

Because it is nice to switch up that slice of regular banana bread every now and then.

 chocolate chip banana bread {gluten-free}

  • 1 cup gluten free oat flour (I use Rob’s Mill)
  • 1 cup brown rice flour (**You can use 2 cups whole-wheat flour instead of the oat and rice flour)
  • ¾ tsp baking soda
  • ½ tsp salt
  • ½ cup brown sugar
  • ¼ cup sugar
  • ¼ cup coconut oil, melted (or you can use canola or vegetable oil)
  • 2 eggs
  • ⅓ cup nonfat Greek yogurt
  • 1 ½ tsp. pure vanilla extract
  • 3 bananas, mashed
  • ½ - 1 cup dark chocolate chips (optional. raisins are great too)

Directions:

- Whisk flours, baking soda and salt in a medium bowl and set aside.

- In a separate bowl, blend sugars and oil. Add eggs. Mix in yogurt, vanilla extract. Add the mashed bananas and fold in the chocolate chips.

- Bake in bread pans at 350 degrees for about 45-50 minutes.

- Take out and let cool. Then store at room temperature for a few days, or wrapped in the refrigerator for a week.

FOR A SWEET-TREAT:  Need something sweet after dinner? Slice this bread and spray both sides with a spray butter (or regular butter). Then, toast the slices on the stovetop in a nonstick skillet. 

The chocolate chips soften and sort of melt. You get the idea. :)

Now, this bread just proves that a gluten-free bread may even top all others.
