chocolate granola
My granola obsession is still in full swing. I try it everywhere I go and I am constantly baking up new combinations.
This recipe is one I'm pretty excited about sharing.
This is a much sweeter granola. This is a chocolate granola.
You know….
For when you want something chocolate in the afternoon or post-dinner.
For when that plain honey granola just isn’t doing it for you.
This is another recipe from The Mast Brothers Chocolate: A Family Cookbook. The Mast Brothers Chocolate factory in Brooklyn had this granola in a bowl for customers to sample.
When I read this recipe in their cookbook, I was intrigued by the process. You bake the granola and then stir in the melted chocolate mixture.
To mine, I added shredded coconut instead of the dried cranberries. I just really love the coconut with the chocolate and almonds.
My Tip: Double the batch and share with friends.
Chocolate Granola
Adapted from Mast Brothers Chocolate: A Family Cookbook
- 1 cup raw almonds (chopped, sliced, or whole)
- 1 cup pecans, chopped (I do a mix of pecans and walnuts)
- 1 - 1 ½ heaping cups of rolled oats
- ½ cup shredded coconut (optional)
- ½ cup honey
- 2 tablespoons brown sugar
- 2-3 tablespoons unsalted butter
- 2 tablespoons unsweetened cocoa powder
- ½ cup cacao nibs (optional)
- ½ cup dried cranberries or cherries (optional)
- 5 ounces dark chocolate, chopped (optional)
Directions:
- Preheat oven to 350 degrees.
- Combine almonds, pecans, coconut and rolled oats with honey and brown sugar until it is all mixed and coated (it will be very thick and clumpy, don’t worry!)
- Spread out on a baking sheet and bake for 15 minutes.
- In the meantime, in a saucepan or in the microwave, melt the cocoa powder and butter.
- In a small separate bowl, mix together the cacao nibs, cranberries, and chopped chocolate, if you are adding these (I omit this step because I don’t add the dried fruit and chocolate)
- Stir the melted butter mixture and put it in a large bowl. Add the baked oat mixture. Stir until all the granola is coated in the chocolate. It will be warm and wet-looking.
- I pop the finished granola back in the oven for another 10 minutes or so. (when you take it out, add the dried fruit & chocolate mixture, if using).
- Take out and let cool. Store in a jar or in bags.
Trust me.
This jar of granola is like, really good.
