Butterscotch lovin'

So, the other day I asked my friend what their favorite cookie was…and their response?  It was not the average chocolate chip or peanut butter…but it was “Oatmeal Butterscotch”

Then, my sister told me that one of her husband’s favorite cookie was Oatmeal Butterscotch…

Am I missing something here? 

I don’t think that I have had an oatmeal butterscotch cookie. So that means that there is a cookie out there worthy of the “favorite cookie” title that I have no idea about.  Now, this cannot happen!  So I decided to make these cookies myself…

     

I don’t know the perfect recipe for Oatmeal Butterscotch cookies.  But I usually trust the classic Nestle Toll House recipes.  So I adapted my recipe from the of the Oatmeal Scotchies recupe on the back of the bag of Nestle Butterscotch chips.

Trust me, try these cookies and you will not be disappointed!   

OATMEAL BUTTERSCOTCH COOKIES

Ingredients

  • 1 ¼ cups all-purpose flour (I use whole-wheat)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup (2 sticks) butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick or old-fashioned oats
  • 1 2/3 cups (11-oz. pkg.) Nestle Toll House BUtterscotch Flavored Chips 

- Preheat over 375 degrees

 - combine flour, baking soda, salt and cinnamon in small bowl.

 - Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture.

- Stir in oats and chips. Drop by rounded tablespoon onto ungreased baking sheets.

 - Bake for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
