Classic Chewy Sugar Cookies
A classic chewy sugar cookie is always that cookie I turn to when I want to bake something but I’m out of a lot of ingredients (like chocolate chips!). I always seem to have everything in the pantry to make this cookie. It’s also a recipe I have been making since I was a teenager! That’s over 2 decades of baking this very recipe. When I want a chewy sugar cookie, I don’t stray too far from making this one. And it’s why it’s also a recipe I share in my Cookie ECookbook. A cookbook where I compiled my top-ten favorite cookie recipes. So basically what I am trying to say is… this recipe is a keeper!!

You can also make these into cookie sandwiches, putting frosting between them. When I was in high school, we visited my sister at college and my mom brought these sugar cookies to her in her dorm. I still remember they were sandwiched with white icing in the middle and SO good. Every time I make these, I think about those cookies in a plastic tin that we brought to my sister’s college. I always tell myself I need to make those sugar cookie sandwich cookies again.
The Ingredients:
all-purpose flour
baking soda
baking powder
salt
unsalted butter
white sugar
egg
pure vanilla extract
buttermilk (If you only have milk, these are just fine made with regular milk!!)
I love that I usually always have these ingredients on hand. I don’t always have buttermilk though, that was in the original recipe my mom and I used to make when I was younger. But lately, I will just use regular milk that I have in the fridge and it works just fine.

CLassic Chewy Sugar Cookies
2 ¾ cups all-purpose flour
1 tsp. baking soda
½ tsp baking powder
pinch of salt
1 cup unsalted butter, softened (2 sticks)
1 ½ cups white sugar (plus about 1/4 cup extra sugar for rolling dough balls in)
1 egg
1 tsp. pure vanilla extract
3-4 tablespoons buttermilk (If you only have milk, these are just fine made with regular milk!!)
Directions:
In a small bowl, combine flour, baking soda, baking powder and whisk with pinch of salt. Set aside.
In a mixer, cream butter and sugar until smooth. Beat in egg and vanilla.
Blend in dry ingredients - add the buttermilk (or milk) to moisten and make soft but not too watery.
Roll into 1 tablespoon-sized balls and roll the balls in the extra white sugar.
Bake at 375 for 8 -10 minutes. Cool for 3-5 minutes on the pan. Then, remove to wire rack and cool completely.
