Easy Peanut Butter Energy Bites
Today is all about easy. When I think of making something that will be pretty fast, and I can make all in one bowl, I think of a peanut butter no-bake energy bite.
I love energy bites because it’s something I can keep in my fridge and grab and go. For some reason, I always find myself “going” - and if you know me, you know what I mean. BUT, I swear I am working on slowing down and enjoying the little things in life. My kids really allow me to do that. To just stop things and slow down, smell the flowers, talk and enjoy life. Thank goodness for those little ones! I feel like they ground me on what really matters in life and really shift my priorities. And speaking of kids, they will eat these energy bites, too! Which is a reason I like to load them with chocolate chips, they love that. Or I will do M&M’s. It kind of makes it seem like a sweet treat and is a tad healthier than a straight up cookie or candy. which don’t get me wrong, is perfectly fine in my book to have and I don’t restrict sweet (everything in moderation right?!)
When I make a no-bake energy bite, I usually make them with a similar formula that I am sharing today. Here are the four parts:
Oats (I prefer an organic one! Rolled or quick oats both work fine)
Peanut Butter (I try to opt for a natural peanut butter - creamy or crunchy - where the only ingredient is peanuts)
Pure Maple Syrup
Chocolate (any mini or regular chocolate chips work, and M&M’s are fun too!)
The process is rather simple. You just mix everything up in a large bowl. You could also use a mixer! I find it easier than getting our food processor out and using that. Something about a bowl with a spoon just feels easier. Then, after mixing, I will use a cookie scoop and scoop dough balls. And then roll them up to smooth them and lay on a sheet or plate and chill in the fridge.

Easy Peanut Butter Energy Bites
2 cups organic oats
1 cup natural peanut butter
1/4 cup chocolate chips
pinch of salt (if PB is unsalted)
1/2 cup chocolate chips
Instructions:
In a large bowl with a spoon, or in a mixer, combine the oats with the maple syrup and salt and the peanut butter. Add in the chocolate chips.
Roll into balls of desired size. Chill in the refrigerator.
Enjoy all week. Store in an air-tight container in the fridge.
