Cinnamon Apple Oatmeal Cookies
Who wants to chop up an apple and put it in your cookies!! Let’s do it! These are so good, and so fun for fall! They don’t last long in our house!
Apples are on the mind this time of year, it’s one of my favorite things about fall in the Midwest. All the apples! Fresh apples everywhere, it seems. Whether you are picking apples at an orchard, picking them up at a farmer’s market, or grabbing them at the store, I swear apples in the fall just taste better.
I am constantly thinking of how to incorporate them into baking, naturally…
So… here ya go with apples in your cookies!!
These oatmeal cookies are packed with all the flavors of the season—think sweet apples, a touch of cinnamon, and a comforting oat base. Perfect for an after-school treat or a weekend afternoon. The apples soften these cookies, which I kind of love, making these easy to eat.

It’s also fun to make with your kids, my three-year-old and I have fun making these!
You could also add some mix-in’s like raisins, chocolate or nuts!
Cinnamon Apple Oatmeal Cookies
½ cup unsalted butter (1 stick)
¾ cup dark brown sugar
1 egg
1 tsp pure vanilla extract
1 ¼ cup all-purpose flour
1 ¼ cup oats (I use organic rolled oats)
1 tsp. ground cinnamon
½ tsp. baking soda
¼ tsp salt
1 cup peeled and finely chopped apple (1 medium to large apple)
2 tsp fresh lemon juice (juice from 1 small lemon)
Instructions:
1. Peel and chop apple and let set in lemon juice while you make the cookie batter.
2. Blend the butter and sugar in a mixer until creamy. Add egg and vanilla.
3. Add in the flour, oats, cinnamon, baking soda and salt. Stir in the apples.
4. Bake cookies in the oven at 350 degrees for about 15 minutes. Let cool and then enjoy!
5. This batch will make about 18 cookies.
