My Go-To Fall Grilled Cheese: Cheddar, Apple and Prosciutto

My Go-To Fall Grilled Cheese: Cheddar, Apple and Prosciutto

When it comes to lunch, I’m all about something quick, satisfying, and VERY, very simple. Many already know my obsession with open-faced PB toast and I will have that for lunch almost daily when I am working from home.

But sometimes I want to switch it up. But still stay on my fall-theme with applies! Enter my go-to grilled cheese with apple + cheddar. It’s been my favorite way to make a grilled cheese that brings together a perfect mix of sweet, savory, and salty: apple, cheddar, and prosciutto grilled cheese.

This combination sounds fancy, but it’s super simple, and it checks all the boxes for me. The crisp sweetness of the apples (I love using the local ones we have picked at Liberty Orchard and Eckerts!), the sharpness of the cheddar, and the salty bite of prosciutto—sandwiched between buttery, perfectly grilled bread—is all I need to feel like I’m treating myself, even on a busy day.

It’s more of a process than an exact recipe, and here are the ingredients you need:

  • Bread (I use this Ezekiel Bread)

  • Cheddar cheese slices

  • Prosciutto

  • Apple, thinly sliced

  • Butter

Here’s the quick rundown:

  1. Start with two slices of your favorite bread. I prefer Ezekiel Bread (I digest it best! I get the Food for Life brand!) and you can find it in the refrigerator section of most grocery stores.

  2. Layer a few slices of cheddar, thin apple slices, and prosciutto between the bread.

  3. Butter the outside of the bread (both sides) and grill in a pan on medium heat until golden brown and melty on the inside.

The beauty of this sandwich is in the balance of flavors, plus it’s versatile. This is one of those meals that feels fancy enough to share, yet easy enough for chaotic weekday lunches when I am working from home and running around.

VARIATIONS: If you’re not into prosciutto, swap it for turkey or leave the meat out altogether. You can play around with different kinds of cheese, or add a little Dijon mustard for an extra tangy kick!!
