Brown Sugar Chocolate Chip Cookies

Well, summer really feels like it’s here! The nights are long and my kids play outside often. I feel like lately we always have some cookies on the counter. I think this also is because my girls are home more with school out and when we don’t know what to do, we bake :)

This month we’ve been enjoying these brown sugar chocolate chip cookies. Parker and I made a batch and dropped some off to our neighbors. Then a few days ago, I made another batch and brought them to a pool party. I love this recipe because it’s heavy on the brown sugar and vanilla, making it extra yummy.

Brown Sugar Chocolate Chip Cookies

  • 2 sticks (1 cup) unsalted butter, softened

  • 1 cup dark brown sugar

  • 1/2 cup white sugar

  • 2 large eggs

  • 1 Tablespoon pure vanilla extract

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 2 1/2 cups all-purpose flour

  • 2 heaping cups chocolate chunks or chocolate chips

Instructions:

  1. Preheat oven to 375 degrees.

  2. In a mixer, beat the softened butter until creamy. Add in the brown sugar and sugar and continue to beat until creamy and completely combined. Add in the eggs and combine. Add the vanilla extract.

  3. In a separate bowl, whisk together the salt, baking soda, and flour. Add the flour mixture slowly to the butter mixture and beat until just combined. Fold in the chocolate chunks.

  4. Using a cookie scoop, scoop dough balls onto a parchment-lined baking sheet and bake for 9-10 minutes, or until the edges are golden brown and the middles are just about baked. Let cool for 5–10 minutes on the baking sheet. Then, transfer to a wire rack to cool completely. Repeat with remaining dough.

  5. Makes about 30 cookies
