3-Ingredient Peanut Butter Cookies (gluten-free)
I had a table at a recent event at Bowood Farms and a woman who walked by needed an easy gluten-free recipe to make with her grandkids over the holidays. I instantly thought of this cookie and wrote it down for her.
If you want a SUPER easy and SUPER yummy peanut butter cookie with just three ingredients, this is it.
I love adding the Hershey Kisses to it, for a chocolate touch. But, you can also just roll the dough in sugar and use the cross-hatch peanut butter cookie pattern for a more classic peanut butter cookie feel.
This will make about 12-14 cookies.
3 Ingredient Peanut Butter Cookies
1 cup peanut butter
1 cup white sugar (plus additional sugar for rolling in the dough balls)
1 egg
Hershey Kisses (optional)
Instructions:
In a bowl with the wooden spoon or in a mixer, combine the peanut butter, sugar and egg until fully combined.
Make tablespoon size dough balls and roll into sugar and place on a cookie sheet lined with parchment paper.
If you are making these with hershey kisses, after you roll into sugar and place on cookie sheet, bake at 350 degrees for about 8-9 minutes. Take out and press the Hershey Kisses into each dough ball and bake for 1-2 more minutes.
If you are not using the chocolate, after rolling the dough balls in sugar, you can use a fork and make a cross-hatch pattern. Bake at 350 degrees for about 10 minutes.
