Chewy Chocolate Chip Cookies

Baking with children. Some may say it’s too hectic, too messy… and it probably is. But it’s THE BEST. The second my 2.5 year-old gets excited that we are going to bake and runs and grabs our aprons, my heart just melts.

Lately the world has been kind of uncertain and scary. We have been taking things seriously over here and staying home as much as we can. We need to all do our part because it is not about just us, it’s about EVERYONE. I am so unsure of what the next days and weeks will bring for us and I just hope we can all come together and agree to stay apart so we can bounce back faster.

Since we are home, it means we are baking a lot! This weekend it was these chewy chocolate chip cookies. Baked until JUST golden brown, not overdone. Giving them an addicting chewy, softness to them. Probably also thanks to the heavy hit of vanilla extract, lots of butter and dark brown sugar.

We are social distancing over here and good old-fashioned cookies are making things better!!!!

Chewy Chocolate Chip Cookies

  • 2 sticks (1 cup) unsalted butter, softened

  • 3/4 cup dark brown sugar

  • 3/4 cup white sugar

  • 2 teaspoons pure vanilla extract

  • 2 eggs

  • 3/4 tsp. salt

  • 1 tsp. baking soda

  • 2 1/3 cups all-purpose flour

  • 1-2 cups chocolate chips or chocolate chunks

Directions:

  1. In a mixer, beat the butter and sugars until creamy.

  2. Add the eggs and vanilla and mix to combine.

  3. Slowly add in the flour and remaining ingredients (except the chocolate chip). And mix to combine.

  4. Fold in the chocolate chips.

  5. Bake at 375 degrees for about 9-10 minutes, or until the cookies are just turning golden on the edges. Take out and let cool on the cookie sheets. Remove and enjoy or store in air-tight container.
