Easy Winter Fruit Salad {no added sugar}

This month my husband and I are working whole foods back into our diet. And I have to say, just a week or so into it and I feel SO much better. For many reasons. My morning sickness has also tapered and I am back in the kitchen, packing my lunches and cooking dinner. It’s like I’m a new person!

This week on St. Louis Magazine, I shared this easy fruit salad. You don’t even need a syrup or sugars. The juices of the citrus and pomegranate create just the right amount of sweetness and liquid. I am on a serious citrus kick and this salad hits all the right spots for me. Plus, it’s super pretty in my opinion.

Winter Fruit Salad

  • ·         2-3 large grapefruits, segmented

  • ·         2-3 large navel oranges, segmented

  • ·         Arils from 1 pomegranate

  • ·         Pinch of sea salt

Directions:

  1. Peel and segment the grapefruit and oranges. Place segments in a bowl. Squeeze any remaining fruit juices into the bowl.

  2. Cut the pomegranate in half. Slightly squeeze each half over the bowl of fruit to allow the juices to come out.  Place the pomegranate halves in a separate bowl filled with water. Submerge the pomegranate and remove the arils. The seeds will stay at the bottom of the bowl as you skim the water to remove all other pomegranate pieces. Strain the arils and add to the bowl of fruit.

  3. Mix the arils, oranges and grapefruit together with their juices. Sprinkle with sea salt. Let sit in the refrigerator until ready to serve. Enjoy within 2 days.

  4. Makes 4 servings.
