My Favorite Chili-Lime Roasted Cashews
Sharing an Urban.Apron. favorite today!! I first shared these chili lime roasted cashews on my blog 9 years ago in 2015. Then again in 2018. It’s crazy how time flies, especially now with kids getting older by the day. In 2018, my oldest was pretty much still a newborn, I was blogging from our two-bedroom apartment on the third floor of an apartment building in the central west end in St. Louis. I had no idea what was in store in the coming years. Life looks a lot different now. Still blogging, of course. And that part hasn’t changed. But now with three kids and we have a home a few miles away from CWE, and with a yard now. Our life, in general, has changed a bit.
Time felt like it was going fast then, and now, I am more hyper aware of just how fast it goes, as Dylan is about to turn 6.5 years old. The once sleepless nights evolve into conversations, laughter, and shared adventures with my growing kids. The home, once filled with baby toys, now is filled with art projects, markers, dolls and trucks. And yet, with each passing year as my family evolves and gets older, my blog remains a consistent thread in my life.
So yeah… just grateful to share these recipes and life’s moments with you!!!! Just so, so grateful. When I look back and reflect, it’s when I really realize how important this space I hold is to me and how grateful I am that you are part of it and reading this post.
Now to this popular recipe!!!! These chili-lime roasted cashews are a staple snack for Chad and me. It’s Chad’s favorite and if you make them, you will see why!
The recipe makes 3 cups because trust me, you'll want a big batch! I buy the raw cashews at Trader Joe's or in bulk at Whole Foods (or any store with bulk raw nuts). I store them on our counter in a large mason jar or large glass container.

Chili Lime Roasted Cashews
3 cups raw whole cashews
2 tablespoons olive oil
2 tablespoons chili powder
¼ tsp. cayenne pepper (optional and adds a little heat)
1/2 tsp. sea salt
Juice from 1 large lime
Directions:
Preheat oven to 350 degrees. In a medium bowl add the nuts and olive oil and toss to combine. Add in the chili powder, cayenne pepper and sea salt.
Add in the fresh lime juice and pour the mix on a baking sheet lined with parchment paper.
Roast for about 15 minutes, tossing halfway through. Make sure to keep an eye on the nuts around 15 minutes, and take them out before the nuts start to darken too much and burn.
Take nuts out and let cool. Store in a large mason jar at room temperature.
