The Best Ice Cream Cookie Sandwiches

This is the perfect summer treat! Ice Cream Cookie Sandwiches really take me back to my childhood. My mom would make her homemade chocolate chip cookies and put a scoop of ice cream between them and wrap them up individually and freeze. Then, we would have ice cream sandwiches in the freezer ready and waiting in the summer.  It is one of my favorite memories.

There is something super tasty about this frozen treat kind of softening as you eat it. The cookie slowly gets softer and more chewy with each bite.

We recently went to a family gathering and my mom brought out cookies and a tub of ice cream and we made our own ice cream sandwiches right there. It was a “make your own” kind of situation and it was so fun and they went sooo fast!

Here is the process:

  1. Bake the cookies. I love using a batch of my brown sugar chocolate chunk cookies - recipe below in this post. They are sturdy, yet chewy and stand up well to ice cream sandwiches. You can also bake the batch of cookies and then freeze them so it’s even easy to assemble the cookies and you don’t break any as you press the sandwich together with the ice cream.

  2. Get ice cream and assemble the cookie sandwiches. I place one scoop of vanilla ice cream on one cookie and then place another cookie on the other side to make a sandwich and press them together. It helps if the ice cream is a little bit softened, so it will press together easier in the sandwich. But not too soft that it is dripping everywhere! Leaving the ice cream out about 5 minutes before scooping helps soften it.

  3. Eat right away or freeze! If you are freezing them for a later time, it’s best to individually wrap up each ice cream sandwich. This makes it super easy to remove one from the freezer and eat!

Ice Cream Cookie Sandwiches

  • 2 sticks (1 cup) unsalted butter, softened

  • 1 cup dark brown sugar

  • 1/2 cup white sugar

  • 2 eggs

  • 1 tablespoon pure vanilla extract

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 2 1/4 cups all-purpose flour

  • 2 cups chocolate chunks or chocolate chips (dark chocolate or semi-sweet)

  • Your favorite vanilla ice cream

Instructions:

  1. Preheat oven to 375 degrees.

  2. In a mixer, beat the softened butter until creamy. Add in the brown sugar and sugar and continue to beat until creamy and completely combined. Add in the eggs and combine. Add the vanilla extract.

  3. In a separate bowl, whisk together the salt, baking soda, and flour. Add the flour mixture slowly to the butter mixture and beat until just combined. Fold in the chocolate chunks.

  4. Using a cookie scoop, scoop dough balls onto a parchment-lined baking sheet and bake for 9 minutes, or until edges are golden brown and the middles are just about baked. Let cool for 5–10 minutes on the baking sheet. Then, transfer to a wire rack to cool completely. Repeat with remaining dough.

  5. Once cookies are completely cooled, you can assemble the ice cream sandwiches. To speed up the cooling process, you can place cookies in the freezer until firm. To make ice cream sandwiches, with an ice cream scoop, scoop slightly softened ice cream onto an inverted cookie and top with another cookie. Press down slightly until sandwiched together. Wrap sandwiches individually in plastic wrap, if desired. Repeat with remaining cookies. Store in freezer in an air-tight container or freezer bag.
