Peanut Butter & Oat Snack Bites {gluten-free}

Quick post about a quick snack for you today. Because it's summer and it's hot...and let's not turn on the oven today, okay?

I stir these up in a bowl, roll into balls and then store in the refrigerator for the week ahead. Then I'll pop a few in my bag each morning for an afternoon snack at work.

With just a touch of honey and packed with protein, these energy bites are my jam right now. 

Peanut Butter & Oat Snack Bites {Gluten-Free}

  • 1/2 cup old-fashioned oats, gluten-free

  • 1/4 cup ground flaxseed (flaxseed meal)

  • 1/3 cup all-natural peanut butter (no salt added)

  • Pinch of sea salt (omit if salt is in the PB)

  • 2 Tablespoons raw honey (add more if desired)

  • 1/8 tsp. ground cinnamon

  • 1/8 tsp. pure vanilla extract

Directions: 

  1. In a bowl, mix together the oats and peanut butter until combined. Add in the flaxseed and stir to combine completely. Add in the rest of the ingredients.

  2. Roll into tablespoon-sized balls and store on a plate in the refrigerator to chill. Once hardened place in a plastic bag or air-tight container. I prefer to keep these bites chilled in the refrigerator.
