Cashew Milk

About once or twice a week I manage to make homemade cashew milk... with a newborn. How is this possible you ask? Well, because it's seriously so easy!! And I actually prefer the taste to most non-dairy milks out there at the store... and once you try it, I think you will too! Especially in your morning coffee. 

First, before I go to bed at night, I just place 1 cup of raw cashews in a large mason jar and fill it with filtered water and a pinch of sea salt. I set that uncovered on the counter.

Then, the next morning when I get up, I drain the cashews and place them in my Vitamix with about 3-4 cups of filtered water, 2 dates and a few dashes of cinnamon. I blend and just pour it back into that large mason jar and you have yourself cashew milk. No straining!

Now, the cinnamon and dates are totally optional (you can just blend the soaked cashews with filtered water and be done!), but I use this cashew milk in my coffee so I prefer it to have a bit of a sweeter taste. 

After you get this rhythm down, it's so fast to whip up cashew milk. And you don't have to strain this nut milk, unlike almond milk. So, there is no mess or extra step!

This milk is sweet and has the hint of cinnamon. And it’s sugar-free! 

I hope you make this and try some in your morning coffee. I add it to my black coffee along with coconut oil and froth it with a milk frother. So good!

Cashew Milk

  • 1 cup raw cashews

  • 8 cups filtered water, divided

  • pinch of salt

  • 2 dates

  • Cinnamon

Directions: 

  1. Soak the cashews in about 4 cup of filtered water with a pinch of salt. Soak for at least 4 hours or up to overnight. TIP: For a speedy soak, place nuts and salt in boiling water and soak for 30 minutes.

  2. Once cashews are done soaking, drain them and place in a high speed blender. Add 4 more cups of filtered water. Add in 2 dates and a few dashes of cinnamon, if desired. Blend on high for at least 60 seconds, or until it is completely blended and smooth and the consistency of milk.

  3. Pour into a large jar and store in the refrigerator for the week. Use like you would any milk - in your coffee, cereal, oatmeal, etc.
