Chocolate Pudding {dairy-free}

We've all been there.  Dinner time is coming to a close.  You put down your fork and think... "I could use something sweet."  

It's that urge to eat dessert, and fruit just won't cut it that night.


When this urge hits me, I usually want something fast.  Which most likely leads to a Medjool date stuffed with bit of almond butter (hey, don't knock it till you try it!), and eaten standing up, usually while thinking about whether this will do the trick.  Okay, so desserts are not always as picture-perfect as you see on your Instagram feed (sigh).   

But, when you want something just as fast, and you want to actually sit down and eat it like a true dessert should be enjoyed - well, that's where this super quick and easy chocolate pudding comes in!  

Plus, it's healthy!  So you can enjoy it often. 

Last fall, I completely cut added sugar from my diet for various reasons.   I came to not even miss it, which I thought would never be possible.   Now, other than occasional weekend treats, my day-to-day is sugar-free.  So, when I want something "sweet," I've realized that doesn't always mean you need to doctor it up with sugars.   

That is what makes this pudding amazing.  You don't add sugar, but you still get that intense chocolate flavor.  It's a win - win.  

Mix this up, pour into glasses or jars and top with chopped bananas & nuts.  Store any remaining pudding in the refrigerator and you have for dessert tomorrow night too! 

Chocolate Pudding 

(Serves 4)

  • 4-5 bananas, chilled (5 medium or 4 large)
  • 4 tablespoons raw cacao powder or unsweetened cocoa powder
  • 1/2 cup light coconut milk 

Directions:  

- In a blender, blend all the ingredients and a splash of cold water until very smooth.  

- I recommend chilling the bananas in the refrigerator so they are cold, or thawing frozen bananas.  If you use room temperature bananas, then chill the pudding in the refrigerator until ready to serve.  

- Pour the pudding into glasses, add toppings and serve.  Or, chill in the refrigerator until ready to serve.   

- Store pudding in a container in the refrigerator and eat within 3 days. 

Toppings: 

  • sliced bananas & chopped pecans or walnuts
  • sliced strawberries and fresh blueberries
  • cacao nibs and toasted coconut flakes

There will be days you may need to eat this before dinner.  :)
