Chad's Watermelon Margarita
I take absolutely no credit for this recipe, I’m just the taste tester and recipe poster! After bartending for several years in New York and then here in St. Louis, Chad has a love for creating and making cocktails. He made these watermelon margaritas over the 4th of July weekend and they are SO fun and perfect for a get together or just a sunny day outside!
He juiced an entire small watermelon (just cubed the watermelon and blended in a Vitamix blender), which made a lot of watermelon juice. But, you can store leftover juice in the fridge and drink it all by itself over ice - it’s yummy!
You can also blend this recipe in a blender with ice to make it a frozen margarita! That is what we did the first night we made them. We had some friends over and blended a big batch of it in a blender and poured into glasses. If making this frozen in a blender, just take the recipe below and double it depending on the amount of servings you want and add ice and blend.
Watermelon Margarita
makes 1 serving
2 ounces Tequila
1 ounce fresh lime juice (juice of 1-2 limes, store extra juice in a jar in the fridge)
1 ounce simple syrup (boil 1 part sugar and 1 part water in a saucepan on the stove and let cool, pour into jar and store in the fridge)
splash of Cointreau
Ice
Fresh watermelon juice (about 1 cup)
Instructions:
In a cocktail shaker, add the Tequila, lime, simple syrup, Cointreau and ice. Top it with fresh watermelon juice. Add the topper and shake!
Pour into a glass that is filled with ice. Chad likes to add jalapeno slices to his cocktail.

Frozen Margarita version: add the ingredients to a blender with ice and blend on high until a slushy consistency. Increase the quantities depending on how many servings you need.
